  • Industrial bread production: Which production result needs to change?
  • Gluten-free bakery: Where does the structure fail: proofing if used, baking or cooling?
  • Frozen dough and par-baked products: Is the product frozen as raw dough or after partial baking, and when does volume or texture first deteriorate?
  • Flatbreads and wraps: Does tearing start during sheeting, on the fresh fold, or after storage—and which flatbread format is being made?
  • Heat-stable bakery fillings: Does filling leak, separate or change texture during baking?
  • Packaged bread, buns and rolls: Does the first defect appear after cooling, during slicing, inside the pack or later in storage—and is it firmness, moisture, condensation, seal failure or spoilage?
